Ingredients

  • 3 pounds ground turkey (93% lean or less is recommended)
  • cup panko breadcrumbs
  • ¼ cup plain Greek yogurt
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • ¼ cup finely diced onion
  • 3 cloves garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 0.5 teaspoon onion powder (optional)
  • 0.5 teaspoon garlic powder (optional)

Instructions

  • In a large mixing bowl, stir together the panko breadcrumbs and Greek yogurt. Let sit for 5 minutes to soften the crumbs.
  • Add egg, Worcestershire sauce, diced onion, minced garlic, salt, pepper, and optional powders. Mix well.
  • Gently fold in the ground turkey until just combined. Avoid overmixing.
  • Shape into 12 equal patties, about ¾ inch thick. Press a thumbprint in the center of each.
  • Heat a skillet over medium heat. Cook patties for 5–6 minutes per side until they reach 165°F (74°C). Flip only once.
  • Let patties rest for 5 minutes before serving to retain juices.

Notes

  • Use 93% lean ground turkey for best flavor and moisture.
  • Mix breadcrumbs and yogurt first to form a panade, helping patties stay juicy.
  • Always use a meat thermometer for accuracy.
  • Refrigerate patties before cooking for better shape.
