Ingredients
  

Brownie Base

  • 1 cup whipped cottage cheese or blend regular cottage cheese until smooth
  • 1 cup natural almond butter creamy, no added sugar or salt
  • ½ cup cocoa powder Dutch-processed or dark cocoa
  • ¾ cup sugar white or brown sugar

Optional Mix-Ins

  • ½ cup chocolate chips or chopped chocolate optional topping or mix-in
  • ¼ cup chopped walnuts optional

Instructions
 

  • Preheat your oven to 350°F (180°C). Line an 8x8-inch baking pan with parchment paper.
  • In a large bowl, whisk together the whipped cottage cheese, almond butter, cocoa powder, and sugar until smooth and glossy.
  • If using any optional mix-ins, gently fold them into the batter.
  • Spread the batter evenly into the prepared baking pan. Sprinkle extra chocolate chips on top if desired.
  • Bake for 25 minutes. The edges should be set, and the center slightly soft. A toothpick should come out mostly clean.
  • Let the brownies cool completely in the pan before slicing into 12 pieces.

Notes

  • Blend cottage cheese if using regular, to ensure a smooth batter.
  • Avoid overbaking to maintain fudgy texture.
  • Brownies store well in the fridge for a week or in the freezer for months.
  • Add a pinch of espresso powder or vanilla extract to enhance chocolate flavor.
